Chameleon cake

Here is a recipe for one of my favourite cakes. I call it a chameleon cake because depending on the last ingredient(s) you add, it tastes each time different. It is very easy to make and tastes great!

Base ingredients:
200 g semolina (dehydrated fine wheat dunst)
500 g tvaroh (special white cheese) - you can substitute it by white yoghurt
160 g vegetable butter - you can substitute it by vegetable oil or normal butter
200 g sugar
2 eggs
12 g baking powder
crumb of salt

Last ingredient(s):
Use your phantasy! You can add raisins, nuts, chocolate or dry fruit, milled walnuts,... it always tastes delicious. My favourite variation is with pieces of dark chocolate & hazel nuts.

Mix the base ingredients in a bowl (manually or you can use a mixer), add the last ingredient, pour it on a baking pan greased with butter and bake 10-15 min at 200°C (until the cake grows double) and then bake another 20-30 min at 160°C until the surface turns brown. Let it cool down a little and you can finally eat it!

Christmas variation: Prepare the cake of base ingredients and milled walnuts. After the cake is ready and cool, cut it in small cubes (3x3x3 cm), wet the cubes in warm liquid chocolate and cover them by chopped coconut immediately. Cool the cubes in the fridge. You get delicious Christmas sweets!

Tips:
  • Use brown sugar, it is healhier.
  • Use defatted tvaroh, the cake tastes equally delicious and you avoid unnecessary fat.
  • Eat it with Haagen Dazs ice cream on the top (not very healthy but it is worth the sin. ;-) ).
