Red Beet Based Recipes

I LOVE red beets.
Too bad most people just buy the pickled ones which hides the true taste and texture of a good fresh beet.
They cost next to nothing, you can buy them everywhere, but make sure they are not soft. Store them in the fridge and they stay fresh for nearly two weeks.
I like them on their own as well, diced and steamed they taste great with just a tiny bit of oil and salt.
If you want a bigger meal I'd go for the:

Baked Beets, Carrot and Sweet Potatoes

1) preheat your oven to 180 degrees celsius

2)Peel and Dice into small cubes equal amounts of:

  • fresh, peeled Red beets
  • Carrots
  • Sweet Potatoes (if youre cutting back on carbs it tastes great without it also)

3) Flavour:

  • 1 tbs olive oil
  • 1tbs honey
  • half a tbs of garlic powder, coriander and of course salt and pepper

4) mix it together and wrap it in silver foil. Bake for about 40 min. or till tender.

Roasted Red Beets and Goat Cheese

-Bake red beets in the oven, grate them and flavour with oil, garlic, honey and coriander

-Slice goat cheese and add a layer of the red beet mixture on top

-refridgerate and serve guests when chilled. Give them a glass of dry white wine as well!
